I'm sure some of you are already aware of how to do this, but for the rest of you, enjoy. Stumbled upon this in my travels, figured I'd pass it on. This is instructions for just the Zelda games, but it can be used for any of them if the textures exist.
Ocerina of Time HD texture pack + installation instructions
Here you go don't say i never gave you anything. Don't be intimidated by the length, it's simply written so that even the biggest of retards can manage it. You will already have the first few steps done.
Step 1: Download Project64

Step 2: Download ROMs and put them wherever (preferably the Project64 folder)

Step 3: Download Rice's Video Plugin (RiceVideo6.1.1beta10.rar and BMGLib.rar)

Step 4: Extract the two .dll files from RiceVideo6.1.1Beta10 to the plugins folder of Project64
Step 5: Extract the BMGLib.dll to the root of Project64
Step 6: Download texture pack for game of choice
All the good textue packs are hosted on www.emutalk.net, guy with the username Djipi is a god among men over there and for good reason.

WARNING: Kokiri forest looks bad. Not like terrible unplayable bad, but not up to the standards of the rest of the mod. Djipi fully acknowledges this and is going to have a fully redone version by Christmas. Deal with it or delete that folder and automatically use vanilla textures, ez.

Honestly this pack is pretty unimpressive. It's still really well done but Djipi's is better, unfortunately his MM pack won't be out until this Christmas (but it's damn close) DEAL WIT IT
Step 7: Extract the texture files to Project64/plugins/hires_texture/gamename
You have to create the hires_texture and game name folders
ex:
OoT: Project64/plugins/hires_textures/The Legend of Zelda
MM: Project64/plugins/hires_textures/Zelda Majora's Mask
Step 8: Launch Project64. Go to Options>Settings, and select Rice's Video Plugin as your graphics plugin.
Step 9: Go to Options>Configure Graphic Plugin>Texture Filters and check "Load hi-res textures if available"
Step 10 (Optional): Tweak Graphic Plugin settings. Change fullscreen resolution to your desktop resolution, go to DirectX and max Anti-Aliasing and Anisotrpic Filtering, fiddle with other settings to your liking.
THERE YOU GO! It really isn't hard... at all... and can be done with any emulated game provided there are texture packs available for it.
