I log on at my base and half of it's missing. At first I thought I was griefed but soon realised it was my base just incomplete after all the work I'd done on it. What's happened?

It was probably due to a rollback from an attempt to repair this lag/error somewhere on the map.
Other than that, Im just as clueless as to whats going on.

Could you not save the latest server and then update certain areas where people put a lot of effort into their homes?

The rollback was necessary due to certain chunks crashing the server whenever people entered into them, or logged into them.. and having the server down for 5+ hours at a time along with repeated crashing due to people trying to log into the corrupted area, a rollback is far better than deleting peoples .dat files, as that obviously wasn't working.
Also, everyone who was on in the last day or so has lost their work, including me. And I'm sure the mods/admins don't feel like rolling back EVERYONE's lost work.

Well if there was a way to save everyone's stuff so those who requested could have their homes fixed it would have been appreciated and not taken too long to do.

I believe there is recent backup before the rollback happened... but I think the higher-ups are working on finding exactly what was causing the server to crash and fix that very problem.
Where we got rolled back to, I think, is the last time (estimated) the server was safe, but again, I'm sure there is still a copy of the server more recently than when it rolled back.

We have backups every two hours throughout April / May, the current map is approximately two hours before I got in from school on Wednesday, so it *should* be completely fine.

Restoring builds from maps that are 'in the future', so to speak, would take way more time than it's worth. I won't bore you with the process but it just wouldn't be viable.
